Ingredients

Ingredient list for 2 people for 4 people for 6 people
Tomato, diced 1 2 3
Lebanese cucumber, diced ½ 1
Red onion, finely diced ¼ ½ 1
Lemon juice ½ tsp 1 tsp 1 tsp
Oil 1 tsp 1-2 tsp 1-2 tsp
Fresh parsley, chopped (optional) ½ tbsp 1 tbsp 1 tbsp

Equipment

Bowl, chopping board, knife, juicer or fork, spoon to stir and serve and measuring spoon.

Steps

  1. Combine all ingredients in a bowl and mix
  2. Ready to serve or keep covered in fridge for later (up to 3 to 4 days)

Tips

  • Try a variation: Add 1 ripe avocado diced, 1 small red chilli, deseeded and chopped (or a pinch of dried chilli flakes) and 1 tablespoon fresh coriander, chopped (for 4 people)
  • Spoon on top of grilled or BBQ meats like chicken or fish. Delicious on sandwiches or wraps
