Ingredients

Ingredient list for 2 people for 4 people for 6 people
Sweet potato, no need to peel! 1 small 1 large 1½ large
Potato 1 small 1 medium 1½ medium
Lemon, sliced ¼ ¼-½ ½
Feta cheese (optional) 25g 50g 75g
Fresh chilli ½ 1
Fresh coriander, chopped 2 tsp 1 tbsp 1½ tbsp
Carrot, sliced 1 1-2 2

Equipment

Microwave-safe bowl or container, cling film or lid, chopping board, knife, fork and oven mitt or tea towel.

Steps

  1. Wash the potato and sweet potato and cut out the dark bits (for example damaged skin)
  2. Chop the potato and sweet potato in quarters, lengthways. Depending on size, you may need to chop in half the other way as well
  3. Put potato and sweet potato into a microwave-safe container. Add lemon (plus a little water using carrot. Cover with cling film/lid
  4. Microwave on high(100%) for 10 to 15 minutes, until soft. Be careful when lifting the cling film off the bowl as lots of steam will come out of the container
  5. Remove lemon and throw away. Loosely smash with fork and add flavours if desired

Tips

  • Try a variation: add milk and margarine and mash (traditional mashed potato) or put whole cooked pieces of potato and sweet potato (after microwaving) onto a hot BBQ and crisp.
